Basil Pesto Recipe:

  • 2 cups fresh basil leaves

  • 1/2 cup fresh spinach (optional)

  • 1/4 cup freshly Parmesan cheese

  • 1/2 cup extra virgin olive oil

  • 1/3 cup pine nuts (or walnuts)

  • 3 garlic cloves, minced

  • Juice of half a lemon

  • Pinch of Salt & Pepper 


Grilled Chicken Marinade: 

  • 1 pound thin sliced Chicken Breast 

  • 1/4 cup olive oil

  • Juice of half a lemon & grated lemon zest

  • 3 minced garlic cloves

  • 1/4 cup low sodium soy sauce

  • 1/4 cup Worcestershire sauce

  • 1 teaspoon of honey (or maple syrup)

  • 1 tablespoon Dijon mustard

  • 2 teaspoons dried Italian seasoning

  • Pinch of Salt & Pepper


  • Place Chicken Breasts in a large bowl  and add all marinade ingredients. Combine and let sit for 12-24 hours

  • For the Basil Pesto, add basil, spinach and pine nuts in a food professor, pulse until finely chopped. Next add the garlic, cheese and lemon juice. Then slowly add in the olive oil, you want to add it in until its your desired consistency. Add pinch of salt and pepper.

  • Grill chicken for 10-15 minutes or until lightly charred

  • Once chicken is cooked, place chicken, 1-2 slices of mozzarella cheese, and basil pesto onto bread. Place sandwhich onto panini press or into hot pan. Cook until cheese is melted and sandwhich is hot
